  Chinese food is not a foreign concept to the United States. But in the past, certain recipes have gotten lost in translation.

  The latest example is the Chinese smashed cucumber trend that has recently appeared in New York City. Many of Manhattan’s restaurants now offer smashed cucumbers dressed with sauces such as sesame oil with garlic and yogurt.

  This isn’t the first time that US chefs have accepted Chinese cooking techniques. Chefs in the US lean on flavors that American taste buds are attracted to, but by developing the taste in this way, the original Chinese recipe is sometimes ignored.

  General Tso’s Chicken, chop suey and fortune cookies are among the most popular Chinese dishes in the US. However, “Chinese people don’t crack open fortune cookies after every meal. . . Most Chinese people don’t even know what chop suey actually is, ”Shanghai-based journalist Jamie Fullerton told Business Insider.

  “In the 19th century, what we call Chinese food in the US. . . was a lot of seafood, shark fins, bird’s nests, and a lot of shrimp, ”Yong Chen, author of Chop Suey Nation: The Story of Chinese Food in America, told Yahoo Food. “But American diners rejected that. ”

  Chefs specializing in Chinese cuisine want Americans to try their food. So they changed the ingredients, the cuts of meat and the presentation to suit American palates.

  This is a cultural compromise to make consumers happy. At the same time, they are turning the food into something less Chinese and more American.

Why elephants rarely get cancer is a mystery that has confused scientists for decades. A study was led by researchers at Huntsman Cancer Institute(HCI)at the University of Utah and Arizona State University, including researchers from the Ringling Bros. Center for Elephant Conservation may have found the answer. According to the results, elephants have 38 additional modified copies of a gene(基因)that encodes p53, a well-defined tumor(肿瘤)suppressor, as compared to humans, who have only two. Further, elephants may have a more powerful mechanism for killing damaged cells that are at risk for becoming cancerous. In isolated elephant cells, this activity is doubled compared to healthy human cells, and five times that of cells from patients with Li-Fraumeni Syndrome, who have only one working copy of p53 and more than a 90 percent lifetime cancer risk in children and adults. The results suggest extra p53 could explain elephants’ increased resistance to cancer.

“Nature has already figured out how to prevent cancer. It’s up to us to learn how different animals overcome the problem so we can adapt those strategies to prevent cancer in people, ”says co-senior author Joshua Schiffman, M. D. , pediatric oncologist(肿瘤学家)at Huntsman Cancer Institute, University of Utah School of Medicine, and Primary Children’s Hospital.

According to Schiffman, elephants have long been considered a walking problem. Because they have 100 times as many cells as people, they should be 100 times more likely to have a cell slip into a cancerous state and cause the disease over their long life span of 50 to 70 years. And yet it’s believed that elephants get cancer less often, a theory confirmed in this study. Analysis of a large database of elephant deaths estimates a cancer death rate of less than 5 percent compared to 11 to 25 percent in people.

  Beijing has become the first city to host both Summer and Winter Olympic Games after beating Kazakhstan’s Almaty to hold the 2022 Winter Olympics.

Following a closed-door vote by International Olympic Committee (IOC) members, President Thomas Bach announced that Beijing is the winner of 2022 Winter Olympics during the 128th IOC Session in Kuala Lumpur on Friday afternoon.

With a fully-prepared final presentation by an all-star team, Beijing has successfully convinced the committee members that the 2008 Olympics host city is a more favored candidate for the Winter Games. The high-powered delegation assured IOC members that Beijing was the safe choice because it had already proved it could stage the Games and said it would take winter sports into the backyard of the world’s most populated country.

Chinese President Xi Jinping sent a letter of appreciation to President Thomas Bach on Friday evening, expressing thanks to IOC for its trust and support in selecting Beijing together with Zhangjiakou as the host of the 2022 Olympic and Paralympic Winter Games.

The British Olympic Association (BOA) congratulated Beijing on winning the bid and believed the Chinese capital will host a “great” Winter Olympics.

What I Consider Important in Life

  There is no doubt that different people have different goals in their life, and they may have various answers to this question. My opinion is that the most important thing in my life is health.

First of all, life is short for everyone. Without good health, we won’t have enough time to accomplish what we plan to do. We are entering a brand new century, blessed with new opportunities and faced with challenges. Without a healthy body, how can we catch up with the rapidly changing world? Meanwhile, when we have got wealth and fame but without a healthy body, we will suffer from pains caused by certain illnesses all day long. So wealth means nothing in this case. Beyond any doubt, health is more important than wealth.

To conclude, I personally believe a healthy life is the source of happiness. So let’s join hands to make our life healthier, both in body and in mind.
